I want to set a small aquarium (70 l) stocked with Mountain minnows, Danios (Leopard and Glowlight) and a few species of shrimp,

but I’m not sure that the Danio’s will leave the shrimp in peace.

    Any advice anyone?

I’m guessing they may eat young shrimp but the adults should be ok?

Give your shrimp lots of cover and you should be able to maintain a modest colony.  In my experience even the tiny Danios like margaritatus and erythromicron will hunt baby shrimp, but given enough cover the adults should be OK.  Often with larger fish in the same tank, the shrimp become so stressed that they do poorly, even if the fish do not try to eat them.
